		<description>This recipe sounds wonderful.  I was looking for directions on puffing amaranth but this technique is cause for concern.  Overheating non-stick pans can cause the coating to breakdown and emit dangerous and toxic gases.  Have you explored this and, if you have, do you know one that is safe for this?</description>

		<description>Puffing and popping are different. Popping is what we are talking about here, not puffing. Puffing compromises much of the benefits of amaranth, b/c of the extreme heat and pressure required. Popping is less invasive and it is what we do on the stove top. (Think popped corn, where the corn turns inside out, or puffed corn where it looks like its been blown up with air). 

We are working on a contraption that will pop quantities of the amaranth we grow so we can sell popped amaranth. Stay tuned. Meanwhile we are enjoying Allegria with 1/2 local honey and 1/2 local sorghum molasses.</description>

I really want to find the seeds so that I can puff my own (thanks for the tips!) and grow some to enjoy the greens. I&#039;m sure I&#039;ll eventually come across some.
