		<description>I love this recipe.  I also love mushrooms and fresh spinach, and I&#039;ve found that the mushrooms can be cooked up with the onions and peppers, and a few spinach leaves added with the tomatoes to get wilted and slightly cooked while keeping their pretty green color.</description>
